“When I’m not in the kitchen, you’ll find me relaxing with
my family. I’m very involved with the kids. My son,
Connor, is five and my daughter, Cara, is nine. I’m oneof
the coaches for my son’s flag football team.
My daughter is into cheerleading and just starting to get interested in boys.
And, I do home improvement projects for two reasons.
One, it’s relaxing and, two, it lets my wife, Shelley,
be the boss!”




“I discovered I wanted to be a chef in 1987, when I worked in my first cooking position.

I always loved eating—anything my Grandmothers or Mother cooked. But I was never in the kitchen as a child or had any interest in it until I was older.

Then, while in college, I apprenticed with a chef at a hotel and that’s when it first hit me. I was there six months and got promoted to sous-chef. I’ve been in this business ever since. I guess I wanted to cook more than I thought!

My idea of a great meal is something new, whether it’s the technique or actual food item. Quiet, unobtrusive service and wines paired with each course.”



Carrol's Creek Cafe was recently remodeled to create a sophisticated,
yet welcoming ambience. The wine cellar offers an impressive
selection to diners
.

make sure that working nights, weekends, holidays
and special occasions is something you’re prepared
to do. And be open to continually learning
new things.”
