..Chef Cary Prokos Normandie Farm, Potomac MD

Chef Cary Prokos, the chef and proprietor of the immensely popular Normandie Farm restaurant in Potomac, Maryland, grew up in Washington, D.C. As a youth, Chef Prokos helped at both his father’s gas station and his grandfather’s restaurant. Not knowing at that time where it would lead him, he made a decision early on; in his words, “he would prefer to deal with the grease in a kitchen rather than that found in the service bay of the gas station.” After graduating from high school, Cary continued to work at several restaurants in the area in various capacities, and soon came to the realization that if he was going to get ahead in this field, he was going to need more education. Subsequently, he attended and graduated from the CIA in Hyde Park.

Following graduation, Cary returned to the D.C. area and began his career as a chef. His first position was at the Chalet de la Paix in Arlington, Virginia, and from this humble beginning, he began his lasting appreciation for French cooking. After stints elsewhere in the area, Cary ultimately became the executive chef at the famous Watergate in Washington, D.C. The experience gained here ultimately would prove very beneficial in helping him handle the demands he would find in his present capacity.
In 1983, there was an opening for executive chef at the venerable Normandie Farm restaurant, which he successfully applied for. Not long afterward, B&B caterers purchased the property and Cary entered into a lasting relationship with Carl Longly, one of the B&B partners, that remains to this day. For a long time, Cary had known that he wanted to be more than a chef. He had hoped for the day that he would have the opportunity to own and manage his own restaurant. After eleven years, that day finally came when he successfully negotiated to purchase the Normandie Farm from Mr.Longly. Interestingly enough, Mr. Longly remained on as the bookkeeper for the restaurant.

On Mondays, Normandie Farm is closed, and to his credit, Cary devotes that day to spending quality time with his wife and three children. Cary’s wife of 14 years formerly worked at Normandie Farm where he first met her, and they are both blessed with a boy age 6 and twin boy and girl age 8. When they have the opportunity, they like to take time off to stay at their “getaway” place in King George, Virginia where he enjoys his other passion, recreational boating. Cary owns a modest 21’ runabout, and he loves having the opportunity going out on the Potomac River fishing with his children. As a youngster, he fondly remembers spending time fishing with his father, and the quality time spent with his kids today is very important to him.
