David McCallum, the Executive Chef and Co-Owner of the Tilghman Island Inn, is self taught and comes to the hospitality industry from the corporate and academic world. For the last twenty years he has been able to turn a life long love affair with food and wine into a successful, acclaimed restaurant. The basis for his cuisine stems from his southern roots in South Carolina and New Orleans. Also his consulting career has taken him to Europe, South America and Asia where he has made exploring the countries local cuisine a part of those experiences. Flavor and freshness are truly the keys to the restaurants success.



David grew up on a farm and knows the wonderful taste of really fresh produce, eggs, meat, and homemade preserved goods. Therefore, David has made fresh local products the star of the menu. By teaming with local growers, he is able to obtain quality products and help sustain the local growers who provide them. Seafood from the Chesapeake Bay is also an important commodity. Rockfish, crabmeat, bluefish, soft shell crabs, oyster and shad roe are some of the great delicacies obtained locally. The menus are created bi-weekly or more frequently and are based on produce and seafood availability, as well as seasonal specialties of poultry, game and meats. Classic taste combinations with innovative twists are drawn from various American regional and ethnic cuisines including French, Asian, Italian, Southern Low Country, Louisiana, California and Southwest. The dishes are executed with local seafood, product and meats and carefully selected ingredients from other regions. Some regional ingredients include: heirloom rice from South Carolina, grains from Minnesota, grits from Georgia, and local artisan cheese.








The Restaurant has received a Wine Spectator Award each year since 1996 and has also received Santee Magazine “Best Cooking with Wine” 2000 and 2005 in the “Sustainable Restaurant” category. The restaurant has also been featured in Gourmet Magazine, Southern Living, Travel and Leisure, Country Living and numerous other regional and national magazines and newspapers.
