Holiday Honey Sweet Citrus: Satsuma Mandarin

The Satsuma Mandarin, also known as "honey sweet" citrus, are sweet and seedless. One of its distinguishing features is the thin leathery skin which is lightly attached around the fruit, enabling it to be peeled very easily. When pitted against other tangerines, Satsumas enjoy great popularity as a casual snack that is a great addition to any holiday salad, dessert, and beverage. Sweet, juicy, mild, easy to peel, and seedless - what more could you ask out of this delicious fruit?

Arugula, Satsuma, Fennel Salad

2 Satsumas (Keany carries)
1/4 cup of Cider (golden balsamic or white wine vinegar)
1/2 cup of Extra-Virgin Olive Oil (Keany carries)
1/2 tsp of Salt
1/4 tsp of Freshly Ground Pepper
5 oz of Arugula (Keany carries)
1 Fennel Bulb (sliced very thin, about 3 cups) (Keany carries)
1 Sweet Onion (sliced very thin, about 1/2 cup) (Keany carries)
