Sweet Potato Size Classification
Sweet potato size classification is key to determining their best culinary uses and cooking methods. They are typically categorized into three size groups: small, medium, and large. Understanding these sizes can help you choose the perfect sweet potato for your needs.
Small sweet potatoes, weighing between 4 to 8 ounces, are perfect for roasting whole or adding to salads and sides. Medium sweet potatoes, around 8 to 12 ounces, are versatile and can be used in a variety of dishes, from mashed sweet potatoes to casseroles. Large sweet potatoes, including the jumbo sweet potato, weighing over 12 ounces, are ideal for baking or making sweet potato fries.
One of the biggest reasons chefs love steakhouse sweet potatoes is their consistent size year-round, making them a reliable choice for perfectly portioned dishes. These sweet potatoes are carefully selected to maintain uniformity, ensuring even cooking and a beautiful presentation every time.
The average size of a sweet potato varies depending on the variety, but typically, they range from 4 to 6 inches (10 to 15 cm) in length and weigh between 4 to 12 ounces (113 to 340 grams). However, some varieties can grow much larger, especially those cultivated for commercial use!
Local Sweet Potatoes
Ham Produce
Founded in 1975, Ham Farms is a family-owned and operated business headquartered in Snow Hill, NC. After graduating from East Carolina University and completing an off-farm auditing position with Texas Pipeline Gas, Bobby Ham returned home to the family farm. At that time, Woody and Allen Ham were farming approximately 200 acres of primarily row crops. In the early 80s, Bobby had high aspirations and decided it was time to diversify. Beginning with sweet potatoes, the Hams ventured into vegetable production. As the family and the crops grew, so did the company. Before long, the Ham’s Yams sweet potato brand spread nationally and internationally.
Scott Farms
Scott Farms, owned by Stephanie Williams, is a sixth-generation family-owned farm of 3,200 acres of sandy-loam soil. It is recognized as one of the highest-quality packer-shippers in the sweet potato business, both in the U.S. and Europe. They are characterized by their hard work, dedication, and unique process of curing sweet potatoes in an environmentally controlled facility. Dating back to the Civil War era, Scott Farms symbolizes farm life in Eastern North Carolina.
Wood Farms
Since 1967, Wood Farms has been growing, packing, and shipping quality sweet potatoes up and down the Eastern Seaboard. They currently grow about 1,500 acres of sweet potatoes each year. In 2017, they built a new state-of-the-art packing facility that can pack four times more than their old packing line. They pack over one million 40 lbs. boxes of sweet potatoes each year!
Kirby Farms
Kevin Kirby, a fourth-generation farmer, inherited a deep love for the land, nurtured since childhood on the 108-year-old family farm in Hanover County. Working alongside his father, also from Mechanicsville, he now manages the 350-acre farm, passing on the agricultural legacy to his 11-year-old son. Recognized as a Virginia Century Farm, Kirby Farms boasts high productivity and GAP certified practices. Annually, they harvest 28 vegetable crops, including kale, beets, broccoli, cucumbers, squash, watermelon, and sweet potatoes, primarily sold in the Mid-Atlantic region.
Happy Dirt (East Carolina Organics)
Founded in 2004 as Eastern Carolina Organics, now Happy Dirt, the company began when local organic produce was scarce. Today, it partners with about 14 farmers to distribute wholesale organic produce along the East Coast. With 98% of its products grown organically, most are Certified Organic. While primarily sourcing from North Carolina, Happy Dirt is expanding into South Carolina, Georgia, and Virginia, extending growing seasons and yielding southern staples like kale, collard greens, sweet potatoes, okra, root vegetables, and squash.
Sweet Potato Curing Process
The curing process is a vital step that enhances the flavor and shelf life of sweet potatoes. After harvesting, sweet potatoes undergo curing, a process that involves storing them in a warm, humid environment for about 7 to 14 days. This process converts the starches in sweet potatoes to sugars, resulting in a sweeter taste and more appealing texture.
Curing also helps heal any minor cuts or bruises, preventing rot and extending the storage life of sweet potatoes. Once curing is complete, sweet potatoes should be stored in a cool, dark place with good ventilation to maintain their quality.
At Keany Produce, we go the extra mile to bring you the freshest, most flavorful sweet potatoes! Our sweet potatoes are carefully cured to lock in their natural sweetness and perfect texture, ensuring every bite is as delicious as it should be. Whether you’re whipping up a mouthwatering dish or simply craving their rich, earthy flavor, you can trust that our sweet potatoes meet the highest standards of quality.

Sweet Potatoes VS Yams

Though often used interchangeably, sweet potatoes and yams are quite different! Sweet potatoes have smooth, thin skin and flesh that range from creamy white to vibrant orange or even deep purple. They are naturally sweet, with a soft, moist texture when cooked.
Yams, on the other hand, are a starchy, dry tuber native to Africa and Asia, featuring rough, bark-like skin and white, purple, or reddish flesh. Unlike sweet potatoes, yams are less sweet and have a much drier, firmer texture, often requiring longer cooking times. While sweet potatoes are widely used in casseroles, fries, and pies, true yams are more commonly found in international markets and traditional African and Caribbean cuisine.
Are Sweet Potatoes a Root Vegetable?
Yes, sweet potatoes are a root vegetable! Specifically, they are tuberous roots, meaning they grow underground and store nutrients for the plant. Unlike potatoes, which are tubers (a different type of underground storage structure), sweet potatoes develop from the plant’s roots, making them a true root vegetable. This is why they have a naturally sweet flavor and dense, nutrient-rich flesh packed with fiber, vitamins, and antioxidants.
